Ingredients:
1 1/2 cups water
2 tablespoons oil
3 1/2 cups flour
1 package dry yeast
1 tablespoon sugar
1 teaspoon salt
1 teaspoon thyme (or herbs of your choice)

Prepare the kitchenaid mixer with a small bowl. Heat water and oil to 120 F.
In a small bowl combine 1 yeast, salt and sugar.
Allow yeast to proof.
Add half of the flour and mix.
Gradually add remaining flour to form a stiff dough.
Knead until smooth about 5 minutes.
Place dough into a greased bowl, cover allow to rise for about 1 hour.
Punch down and reshape, allow dough to double in size.
Place on a baking sheet. Slash the top several times. Cover and allow to rise until double. Bake in preheated 375 for 15 minutes. Reduce heat to 350 and continue to bake for 20-25 more minutes.
I knead the dough by hand until smooth.
I also split it into two round loaves
to be used later as bread bowls for soup.
