Oven Roasted Onions

Onions.
Bittersweet.
They make me cry.
But I still like them.

I made a decision this week.
It was one of the hardest decisions I've ever had to make,
it was also the easiest.
I feel sadness.
I feel relief.
Bittersweet.

I've been chasing loons for weeks now.
The babies are diving and learning to feed themselves.
There's a lesson in that.

I'm back in the kitchen.
Yay to that.

Oven Roasted Onions

Ingredients:

Sweet Vadalia onions
Olive oil
Salt
Pepper
Fresh Rosemary


Preparation:

Preheat oven to 375
Peel and slice onions into halves or quarters.
Its really just a matter of preference.

Drizzle onions with olive oil
Salt, Pepper and Rosemary them.

Roast in oven until the bottoms are caramelized.




It's good to be back.

It is amazing how a little heat can transform an onion. And the cook, too.

You know Casey,

I checked your site out.
I can see why many of those pictures weren't accepted.

I've had a few not accepted.
Makes me take a closer look at my work,
and pushes me to create stronger images.

And you know what, 99 percent of the time
I've agreed with them up on second look.
My ego's not so big that it can't handle a few "this picture was not accepted"
Nice that they take the time
to point out why don't you think? I do.

The other thing to be remembered,
photography as an art form, and it is,
is always subjective.
No two people see the color blue the same way, and that applies to food images.
So there will always be images
that appeal to one but not another.

Good luck with your new venture, I think.
I'm just not sure what it's point is,
an attempt to slap food gawker and tastespotting on the wrists or give some rejected photos/blogs a second chance...or both.

Kathleen, I found you by way of Food with Style. Your blog looks very intersting! I have a pot of rosemary I'm growing this summer so I think I try it out with this recipe. Keep em coming!
