Every now and then
someone comes a long and knocks you off your feet
in all the best ways.
I had posted this image and a few others from last weeks
trip to the big lake over on FB. Much to my surprise a beautiful poem was
waiting for me in the guest comments underneath this image. I was moved,
in all the best ways.

Emeril Lagasse's Southern Brasied Greens wtih Bacon
Let's face it ...
Slow cooked greens aren't all that photogenic when finished.
Slow cooked greens aren't all that photogenic when finished.
So you're not going to see the end result. I will tell you, they're fantastic.
So is this recipe.
Ingredients
* 3/4 pound sliced bacon
* 3 cups sliced onions
* 8 cloves garlic, mashed
* 3 teaspoons salt
* 3/4 teaspoon cayenne
* 3/4 teaspoon black pepper
* 1 quart water
* 1 (12-ounce) can beer
* 1/4 cup distilled white vinegar
* 2 tablespoons molasses or cane syrup
* 5 pounds fresh greens, such as mustard greens,
collard greens, turnip greens, or kale, rinsed well,
picked over and tough stems removed
Directions
In a large, heavy pot cook the bacon until it has rendered most of its fat, about 5 to 6 minutes.
Add the onions, garlic, salt, cayenne, and black pepper and cook until the onions are wilted, about 4 minutes.
Add 1 quart of water, the beer, vinegar, and molasses and bring to a boil.
Begin adding the greens in batches, pressing down with a wooden spoon
to submerge them in the hot liquid and adding more as they wilt.
When all of the greens have been added, reduce the heat to a simmer and cook the greens,
partially covered and stirring occasionally, for about 1 to 1 1/2 hours or until tender.

To Be Without Apology
Why does the hurricane storm?
It blows and rips the very sea
It rages beyond control
Its outer shell tempered in the wind
It moves all in its path
Pushing and pulling, not to be subdued
Being just to be.
You are the hurricane
strong beyond measure.
Flares of emotion as gusts of wind
Not controlled by the whims of others
You move those in your path

Taking them with you on your journey

Why does the hurricane rest?
In the center of it is peace,

you know I just get through things.
I don't think about who I am in it all.

through eyes other than your own, and it's mind blowing.
what they see is so much more than you ever dream of giving yourself credit for.

the hurricane reference... lol...
someone gifted me the nickname Hurricane Kate years and years ago.
Good or bad, it stuck. I happen to like it, apparently I'm not alone.

Tyler Florence's Chicken and Dumplings
Ingredients
Chicken and Stock:
* 1 (3 to 31/2 pound) whole organic chicken
* 2 bay leaves
* 6 sprigs thyme
* 4 to 5 black peppercorns
* 1 head garlic, split through the equator
* 2 tablespoons salt
Directions
Buttermilk-Chive Dumplings:
* 2 cups all-purpose flour
* 1 tablespoon baking powder
* 1 teaspoon salt
* 2 eggs
* 1/4 cup chopped chives
* 3/4 to 1 cup buttermilk
Sauce:
* 2 tablespoons butter
* 2 tablespoons oil
* 2 carrots, diced
* 2 stalks celery, diced
* 2 cloves garlic, minced
* 2 bay leaves
* 1/4 cup all-purpose flour
* 6 cups chicken stock
* 1 cup frozen peas
* 1 cup frozen pearl onions
* 1/4 cup heavy cream
* Freshly ground black pepper, for garnish
* Chopped chives, for garnish
okay so I was craving just the dumpling.
For the stock:
Place the chicken and all stock ingredients in a large Dutch oven and cover with water. Set over medium-high heat and bring to a boil. Reduce heat to a simmer and cook for 1 hour until the chicken is tender. Skim the surface of fat and scum as it cooks.
When done remove the chicken to a cutting board. Strain the stock and shred the meat into big pieces - the stock will be used for the sauce and the chicken will be folded into it.
For the dumplings:
Sift the dry ingredients together in a large bowl. In a small bowl, using a whisk, lightly beat the eggs, chives and buttermilk together; pour the liquid ingredients into the dry ingredients and gently fold. Mix just until the dough comes together; the batter should be thick and cake-like.
To prepare sauce: In a Dutch oven, over medium heat, add the butter and oil. Add the carrot, celery, garlic, and bay leaves and saute until the vegetables are soft, about 5 minutes. Stir in the flour to make a roux. Continue to stir and cook for 2 minutes to coat the flour and remove the starchy taste. Slowly pour in the chicken stock, 1 cup at a time, stirring well after each addition. Add frozen peas and pearl onions.
Let sauce simmer until it is thick enough to coat the back of a spoon, about 15 minutes. Stir in heavy cream.
Fold the reserved shredded chicken into the sauce and bring up to a simmer. Using 2 spoons, carefully drop heaping tablespoonfuls of the dumpling batter into the hot mixture. The dumplings should cover the top of the sauce, but should not be touching or crowded. Let the dumplings poach for 10 to 15 minutes until they are firm and puffy. Remove and discard the bay leaves. Season with freshly cracked black pepper and garnish with chopped chives before serving.

Will's Tasty Robillita
I hope you like what I've done with your soup Will. : )
Ribollita is a wonderful, tasty Italian soup dating back to the 17th century. Served up with a wedge of Parmesan and some crusty Ciabatta, this is a perfect way to get your veggies in winter or summer!
Ingredients
* 1/4 cup extra-virgin olive oil, plus some for drizzling on bread
* 1 medium onion, chopped
* 1 medium carrot, chopped
* Six slices smoked bacon, stripped of fat and chopped
* 2 cloves garlic; 1 minced; 1 whole
* 1 teaspoon salt
* 1 teaspoon freshly ground black pepper
* 1 tablespoon double-concentrated tomato paste
* 1 (15-ounce) can diced tomatoes
* 1 pound frozen kale or spinach; thawed and squeezed dry (you can certainly use the equivalent amount of fresh product in the summertime, or if available in winter)
* 1 (15-ounce) can cannelloni beans; drained and rinsed
* 1 tablespoon Herbs de Provence
* 3 cups chicken stock (I use ‘Better than Boullion’ vegetable-based stock)
* 1 bay leaf
(Total raw-prep time: 1/2hr)
Directions
* Heat the oil in a heavy large pot over medium heat.
* Add the onion, carrot, bacon, minced garlic, salt, and pepper. Cook until the onion and garlic have begun to caramelize and the bacon is starting to crisp (6-8min.).
* Add tomato paste and stir until dissolved.
* Add tomatoes and stir, scraping the bottom of the pan with a wooden spoon to release all the brown bits.
* Add the spinach, beans, herbs, stock and Bay leaf.
* Bring the soup to a boil, reduce heat and simmer (just bubbling) for around 30 minutes.
* (Total cooking time – 45min.
* Total preparation time – 1 1/4hrs.)
It was tasty indeed!~

I couldn't resist after our phone conversation today.

Bathroom Wall Literature 101
I find it interesting ...
the things people write on bathroom walls.
Of course I photograph it.
More often than not it's offensive.
Sometimes it's quite moving.
This borders on offensive.
I won't apologize for it.
I photograph the world I see.
Not always what we see is kind.
I saw a video on You Tube yesterday.
It slayed me.
A woman throwing defenseless puppies into a river.
To kill them.

On the Subject of Perspective
she would argue with us.
save the dishes for the morning.
we were well parented.
we knew that when at someone's house
when they fed you, you did the dishes.
it was the least you could do.
I didn't get it until I was much older.
But when I did, it just clicked.
It was a paradigm shift.

It wasn't about doing the dishes.
It was all about putting your hands
in that nice, warm, soapy water.
My mom says Granny called it aqua therapy.
for me it was not only the shift in perspective
but recognizing the shift.
my point being ...
the way we see things is often times quite limited.
our perspective isn't the only one.
and sometimes all it takes
is one shift to see things completely differently.
But that usually requires one to be open,
and to consider the possibility
that their viewpoint isn't the only one that's right.
And that usually requires dropping ego.
paradigm shifts are cool.
but recognizing the shift.
my point being ...

For the Love of Joe ...
One of the best things about traveling so many
people consider the worst. Having to sit next
to someone you don't know, suffer thru small talk
while really you'd like nothing better than to rest
your head against the window, yes window seat, score!
You booked that window seat so you could do just that. sleep.
You might even try to fake sleep while the plane loads
in order to avoid the dreaded conversation however it
doesn't quite work as adjustments need to be made,
things put away and before you know it you've exchanged
hello's and so it begins ...
What you didn't know was that a woman would
sit next to you with her husband to her left and tell
you the most incredible story about love, afterlife and
finding love again, so incredible it would bring you to tears.
You shared your story. As the two of you spoke,
you realized the reason you were sitting next to each other...
it was undeniable.
And in the end you were glad you wore your
cowboy hat, the one she noticed when she sat
down next to you and told you it reminded her
of home . That made you smile and feel warm.
Because you did, you asked her where that was
and the moment she answered you knew
the universe had so divinely placed you next
to this person, her story was the very one
you needed to hear and yours was a gift to her.
Each of you were a gift to the other.
