Best unagi comes from Japan which is less fat compared to the China made unagi which is cheaper. A lot of Japanese restaurants in Europe owned my Chinese (not that I don't trust or dislike them) who provided cheaper eats but it's the taste of some ingredients used were slightly different. If you're not that particular,it's ok. In this example the Unagi...I prefer the Japanese unagi which is slightly expensive and less fat even though I'm not a fan of it. This made the fish cripsy and not oily when fried :-D<br /><br />In Japan, they have Eel Day in Summer (Doyo no Ushinohi) which falls on the hottest day in Summer. It's belief that if you eat unagi on this special day, you're strong like an ox (is cow applicable?) because ushi means 'Ox'. It's Unagi everywhere :-D In donburi, onigiri, bento, etc the lots!
